The intriguing tale behind the Liège waffle's origins traces its roots to the Middle Ages, in the charming city of Liège, nestled within the Wallonia region of Belgium. According to legend, it was a culinary endeavor spurred by the sweet cravings of the Prince-Bishop of Liège that birthed this delightful pastry.
In his quest to appease the Prince-Bishop's insatiable sweet tooth, his cook combined a novel ingredient of the time, "pearl sugar," with the luscious essence of vanilla and the richness of butter. This fusion of flavors gave rise to the very first Liège waffle, a momentous creation that has since become a storied delicacy.
What sets the Liège waffle, also known as the sugar waffle, apart from its waffle counterparts is the inclusion of Belgian pearl sugar. When this exceptional sugar is introduced to the waffle iron, it undergoes a delightful transformation, achieving the perfect balance of chewy caramelization.
